Homemade Neapolitan Pizza Recipe

Learn how to make delicious Neapolitan pizza with a few kitchen tools and simple ingredients. This version adapts traditional methods for your home oven, giving you that authentic taste without needing a pizza oven.

Ingredients
  

  • 2 1/4 cup 00 Flour 282 grams
  • 4/5 cup Water 202 ml
  • 1/8 tsp Yeast 0.35 grams
  • 1/2 tbsp Honey 10 grams
  • 2 1/4 tsp Extra Virgin Olive Oil 10 grams
  • 2 tsp Fine Salt 9 grams
  • 1/2 cup San Marzano Tomato Sauce 100 grams
  • 3 oz Fresh Mozzarella 85 grams
  • Grated Parmigiano/Parmesan Cheese just a bit
  • 5 Fresh Basil Leaves small

Instructions
 

  • Prepare the Dough: Mix water, yeast, and honey in a large bowl. In another bowl, mix flour and salt. Combine half of the flour mixture with the wet ingredients. Stir in olive oil, then add the rest of the flour mixture until blended. Cover and rest for 30 minutes, then mix again until smooth. Let it sit for 8-10 hours at cool room temperature.
  • Divide and Proof: After resting, refrigerate dough for 24 hours for cold fermentation. Then, divide into two balls, lightly oil them, and let one ball rest at room temperature for 2-3 hours.
  • Prep Tomato Sauce: Blend canned tomatoes with a bit of salt and olive oil until it's smooth but still a bit chunky.
  • Par-Bake the Crust: Preheat oven with pizza steel on top rack at maximum heat for 1 hour. Shape the dough into a disc, spread tomato sauce on top, leaving edges sauce-free. Bake until edges are lightly browned, about 5-7 minutes.
  • Add Toppings: Sprinkle a small amount of cheese over the sauce, add mozzarella cubes, drizzle olive oil, and bake until cheese bubbles and crust is golden. Add basil before serving.

Notes

If you don’t have a pizza steel, a baking sheet or pizza stone can work, though results may vary.
For best flavor, use high-quality ingredients like fresh mozzarella and 00 flour.
