New York Style Pizza Recipe

Bring the tastes of the City to your own kitchen with this classic New York style pizza recipe, featuring a perfect balance of sweet sauce, stretchy mozzarella, and a crisp yet foldable crust.

Ingredients
  

Pizza Dough

  • 950 g all-purpose flour
  • 19 g fine sea salt
  • 25 g granulated sugar or honey
  • 620 g lukewarm water around 95°F
  • 14 g instant yeast
  • Extra virgin olive oil for greasing

Pizza Sauce

  • 2 tablespoons extra virgin olive oil for sauce
  • 4 cloves garlic thinly sliced
  • 3.5 tablespoons unsalted butter
  • 1 teaspoon crushed red pepper flakes
  • 28- ounce can crushed San Marzano tomatoes
  • 1 tablespoon granulated sugar for sauce
  • 1 teaspoon dried thyme
  • 1.5 teaspoons dried oregano
  • 1 yellow onion halved

Cheese

  • 1.5 pounds grated low-moisture mozzarella
  • Grated Parmigiano Reggiano to taste

Instructions
 

  • Make the Dough: In a large bowl, mix flour, salt, and sugar. In a separate bowl, dissolve yeast in lukewarm water. Combine wet and dry ingredients to form a dough. Knead until smooth, place in a greased bowl, cover, and refrigerate overnight.
  • Proof the Dough: Punch down the dough, divide into 300g pieces, and let them rise at room temperature until doubled in size.
  • Prepare the Sauce: Sauté garlic in olive oil and butter until golden. Add red pepper flakes, then crushed tomatoes, water, sugar, thyme, oregano, and a halved onion. Simmer for 20 minutes, remove the onion, and cool the sauce.
  • Shape and Bake: Stretch a dough ball into a 10-12 inch round, top with sauce and mozzarella. Bake in a preheated oven at the highest temperature (with a pizza stone or steel inside) for 6-8 minutes, or until crispy and golden.
  • Serve: Let the pizza cool slightly before slicing. Enjoy the taste of New York right at home!
