Detroit Style Pizza

Equipment

  • 1 10 x 14 Detroit style pizza pan Any pan will work, as long as it's deep dish and big enough.

Ingredients
  

  • 525 g Pizza dough ball
  • 350 g Blend of whole-milk low-moisture mozzarella and Monterrey jack cheese Feel free to substitute with your favorite cheese blend, or just mozzarella.
  • Detroit style pizza sauce To taste, but you'll need at least several large spoonfuls to create stripes across the top.
  • 10 g Vegetable oil avocado preferred
  • 3 dashes Dried Oregano
  • 3 pinches Parmigiano Reggiano to taste

Instructions
 

  • Prep Pan: Grease a 10×14 inch Detroit style pan with vegetable oil. Make sure to cover every inch but avoid pooling.
  • Dough Placement: Put the dough ball in the center. Press down gently, cover with plastic wrap, and rest for 15 minutes.
  • Stretch Dough: After resting, stretch the dough to fill the pan. If tough, let it rest more, then cover and let rise for 2-3 hours.
  • Cheese: Evenly spread the cheese blend over the dough, reaching the edges for a crispy crust.
  • Bake: Preheat oven to 450°F. Bake on the bottom rack for 15 minutes or until cheese is golden and crust is fluffy.
  • Sauce: Simmer pizza sauce while pizza bakes. Spoon hot sauce over baked pizza.
  • Serve: Cool pizza on a rack for 2-3 minutes, slice, and add Parmigiano Reggiano on top.
