Homemade Pizza with Biga Pre-ferment

Create delicious homemade pizza dough for a light and crispy crust using this Biga pre-ferment method. The pre-ferment adds more flavor and fluffy crusts to your pizza. Works great in a home over or a pizza oven.


Biga Pre-ferment

  • 670 g Bread Flour
  • 300 g Water Room Temp
  • 1 g Dried Yeast or 3.5g fresh

Pizza Dough

  • 135 g Water Room Temp
  • 13.5 g Salt
  • 1 g Dried Yeast or 3.5g Fresh Yeast


Make the Biga Pre-ferment (2 days before)

  • Combine flour and most of the water in a large container, reserving about 50g of water.
  • Mix reserved water with yeast, then add to flour and water. Mix until you have a shaggy, dry mixture.
  • Place in an airtight container and rest for 1 hour at room temperature, then refrigerate.

Making the Pizza Dough

  • Take the Biga out of the fridge 4.5 hours before cooking, let it sit for 1 hour at room temperature.
  • Mix Biga with the remaining dough ingredients. This will take about 30 mins by hand or 15 mins with a mixer.
  • Once the dough is smooth, rest it in an airtight container for 1 hour.
  • Divide the dough into 270g pieces, shape into balls, ensuring tension for a tight, smooth surface.
  • Place dough balls in an airtight container, rest at room temperature for 2 hours.

Shaping and Cooking

  • Dust dough balls with semolina or flour for easy handling.
  • Begin shaping the pizza by pressing from the center towards the edges to move the air into the crust.
  • Stretch the dough to about 12 inches in diameter using your preferred technique.
  • Cook in a pre-heated, high-temperature oven (350+°C) for about 90-180 seconds.


Biga pre-ferment enhances the flavor and texture of the pizza dough.
Be patient while mixing the Biga with the main dough; it may seem wet at first but will become smooth.
Practice the dough ball shaping to ensure perfect pizzas every time.
Adjust dough sizes based on your oven size or personal preference.
