Cozumel Mexican Restaurant to Open New Location in Milwaukee’s Riverwest

Cozumel Mexican Restaurant is set to open in the former location of Stubby’s Gastrogrub & Beer Bar and Pizza Man at 2060 N. Humboldt Ave., Milwaukee. The new restaurant will serve classic Mexican dishes and aims to open in mid-July, though an exact date has not been set.

New Mexican Restaurant Coming to Riverwest

Cozumel Mexican Restaurant is preparing to open a new location in the Riverwest neighborhood of Milwaukee. The restaurant will occupy the space at 2060 N. Humboldt Ave. on the second floor, overlooking the Milwaukee River. This location was previously home to Stubby’s Gastrogrub & Beer Bar for 12 years before it closed in December 2022. Pizza Man then moved into the space in April 2023 but is now considering returning to their previous location.

This will be the fourth Cozumel location in Milwaukee. Co-owner Miguel Lopez, who has been successful in the restaurant industry alongside his brother and business partner Ramon Lopez, says their journey began 23 years ago with their first restaurant opening in 2001.

Preparing for the Opening

The Lopez brothers aim to open the new Cozumel location in mid-July. However, an exact opening date has not yet been determined. In the meantime, extensive cleaning and the painting of Mexican-themed murals are underway to prepare the space. The restaurant will serve classic Mexican dishes such as fajitas, enchiladas, burritos, and tacos. Meals will be complemented by margaritas, wines, and various Mexican beers.

The other Cozumel locations are in Oak Creek, Janesville, and Whitewater, further expanding their presence in Wisconsin. The new Riverwest location will continue to bring the flavors and atmosphere that Cozumel is known for to more Milwaukee residents.
